A simple classic taken to the next level with the unique flavour profile of truffle. This melty, gooey, three-cheesed beauty is a square of absolute heaven.

You will need

Serves 2

  • 4 slices white bread
  • 50 grams Lauds oat melt, grated
  • 20 grams melty plant-based mozzarella, grated
  • 20 grams plant-based blue cheese, grated
  • 10 grams Truffle, finely grated
  • 3 tablespoons vegan mayonnaise
  • 4 cornichons (optional)

  1. Step 1

    In a bowl add the grated cheese, truffle, salt and pepper and toss together.

  2. Step 2

    Spread mayonnaise on one side of a bread slice and place it in a pan on low heat, mayo side down.

  3. Step 3

    Pile the cheesy mixture on top of the bread in the pan.

  4. Step 4

    Spread the remaining slice of bread with mayonnaise on both sides and place it on top of the cheese.

  5. Step 5

    As the mixture starts to sizzle from oozing cheese, turn over onto the other side until the middle is completely melted and the toastie is golden brown on both sides.
