Fresh, zingy, and full of crunchy veg, this green papaya salad is a quick, easy way to whip up something that feels fancy — without the effort. Simply serve with sticky rice and dig in.

You will need

Serves 2-4

For the salad:

  • 1 green papaya, chopped into thin strips
  • 4 red Thai chillies, thinly diced
  • 3 long beans, chopped into 3cm pieces
  • 10 cherry tomatoes, quartered
  • 1/4 cup roasted peanuts, chopped

For the dressing:

  • 1 tablespoon brown sugar
  • 2 limes, juice only
  • 2 tablespoons tamarind water (from concentrate)
  • 2 tablespoons vegan fish sauce

To serve:

  • Sticky rice

  1. Step 1

    In a bowl, mix all dressing ingredients until the sugar has dissolved.

  2. Step 2

    Add the salad ingredients to the bowl, gently tossing through the dressing until completely covered.

  3. Step 3

    Transfer to a serving bowl and serve with a side of sticky rice.
