If porridge doesn’t excite you, chances are you’re stuck in a routine with your go-to recipe and it’s time to mix it up — and how easy it is to jazz up your porridge with other fruits and nuts! Here’s a sure-fire way to renew your love for the oaty classic.

You will need

  • 1 cup rolled oats
  • 2–3 cups any plant-based milk, such as almond, soy or coconut
  • 1 teaspoon chai spices*
  • Almond butter (or sunflower seed butter), to serve

Toasted Coconut Chips

  • 1/4 cup coconut chips
  • 1 tablespoon maple syrup
  • Pinch of salt

Caramelised Apple

  • 1 apple, cored and chopped into 2cm cubes
  • 1 tablespoon coconut sugar

  1. Step 1

    To make the porridge, add the oats, milk and spices to a medium pot over high heat. Boil for 5 minutes while stirring occasionally. Reduce to a simmer for 15 minutes or until the porridge reaches your desired consistency. Add more milk or water for a thinner porridge.

  2. Step 2

    To toast the coconut chips, add all ingredients to a small saucepan over medium heat. Continuously stir until the coconut is fragrant. Set aside.

  3. Step 3

    To caramelise the apples, add the apple and sugar to a small saucepan over high heat. Sauté for 5 minutes, add a dash of water then reduce to medium heat. Cook until the apples have softened and turned golden brown.

  4. Step 4

    Divide the hot porridge into 2 bowls. Top with the coconut chips, caramelised apple pieces and a scoop of almond butter.

Hot tip!

*You can make your own chai spice mix by blending the contents of a chai tea bag. Or you can combine 3 tablespoons cinnamon, 1 tablespoon cardamom, 1 tablespoon ginger and ½ tablespoon nutmeg (use the rest of the spice bend for smoothies or more porridge!).
