If porridge doesn't excite you, chances are you're stuck in a routine with your go-to recipe and it's time to mix it up -- and how easy it is to jazz up your porridge with other fruits and nuts! Here's a sure-fire way to renew your love for the oaty classic.
You will need
- 1 cup rolled oats
- 2–3 cups any plant-based milk, such as almond, soy or coconut
- 1 teaspoon chai spices*
- Almond butter (or sunflower seed butter), to serve
Toasted Coconut Chips
- 1/4 cup coconut chips
- 1 tablespoon maple syrup
- Pinch of salt
- 1 apple, cored and chopped into 2cm cubes
- 1 tablespoon coconut sugar

To make the porridge, add the oats, milk and spices to a medium pot over high heat. Boil for 5 minutes while stirring occasionally. Reduce to a simmer for 15 minutes or until the porridge reaches your desired consistency. Add more milk or water for a thinner porridge.
To toast the coconut chips, add all ingredients to a small saucepan over medium heat. Continuously stir until the coconut is fragrant. Set aside.
To caramelise the apples, add the apple and sugar to a small saucepan over high heat. Sauté for 5 minutes, add a dash of water then reduce to medium heat. Cook until the apples have softened and turned golden brown.
Divide the hot porridge into 2 bowls. Top with the coconut chips, caramelised apple pieces and a scoop of almond butter.
