If you enjoy scooping and eating your avocado straight from the shell (and even if you don’t!), then consider this recipe a glow-up on your favourite creamy fruit … Warmed through, with savoury-sour embellishments, it’s a perfect snack.

You will need

Serves 2

  • 1 perfectly ripe avocado
  • Handful plant-based mozzarella, shredded
  • 1 dill pickle, thinly sliced
  • Salt and pepper

To serve:

  • 1 tablespoon olive oil
  • 1/2 lemon

  1. Step 1

    Place the grill oven on high. Cut the avocado in half and remove the pip. Layer on the cheese, sprinkle with salt and pepper and place under the grill to melt.

  2. Step 2

    When the cheese is golden, remove from oven. Add the pickle slices, and squeeze over some lemon juice. Season with salt and pepper and drizzle with extra virgin olive oil. Scoop and enjoy!
