Who is the fluffiest and richest of them all? This mousse, we guarantee it! And with gorgeous pops of juicy tartness from the fresh orange, and a chewy, bold flavour from the dried slices — good luck sharing this treat with your mates!
You will need
Serves 4
200 grams 80% (or higher) vegan dark chocolate, roughly chopped
50 ml olive oil
Pinch salt
1 tablespoon sugar
300 ml plant-based cream, whipped
1 blood orange separated into segments
3 dry blood orange slices, cut into half
10 mint leaves

Step 1
Roughly chop the chocolate and place in a heat proof bowl over a pot of bowling water to melt, stirring continuously.
Step 2
Once melted, remove from heat and add oil, salt and sugar, stirring until combined and until the sugar has dissolved. Allow to sit for 5 minutes.
Step 3
Whisk the plant-based cream until it forms stiff peaks, then fold through the cool chocolate mixture.
Step 4
Pour the mixture into jars and place in the fridge to set for about four hours. (But in saying that, taste it! If you’re happy with the flavour and texture straight away, you can probably get away with serving them immediately.)
Step 5
Top with segments of fresh blood orange, dried blood orange slice, and fresh mint.
