This right here is the fruitful summer salad of your dreams, featuring every colour of a citrus sunset … A cracking balance of sweet, tangy, and spicy, this dish is as delicious as it is gorgeous.

You will need

Serves 6

  • 6 heirloom tomatoes, cut into 8 wedges
  • 6 golden peaches, each cut into 8 wedges
  • 2 tablespoons olive oil

For the marinade:

  • 1 bunch coriander
  • 1/2 bunch spring onions
  • 5 jalapeños, seeds removed
  • 4 garlic cloves
  • 100ml orange juice (roughly the juice of 2 oranges)
  • 50ml apple cider vinegar
  • 40ml soy sauce (or tamari)
  • 20ml sesame oil

  1. Step 1

    Preheat the oven to 220°C.

  2. Step 2

    Place the tomatoes and golden peaches into separate bowls. Sprinkle the tomatoes with a big pinch of salt.

  3. Step 3

    In a blender, blend the marinade ingredients until it is smooth then pour over the peaches, tossing the peaches to coat in the marinade. Lay them on a baking tray lined with baking paper and bake for 10 minutes.

  4. Step 4

    Remove from the oven and let cool just a bit.

  5. Step 5

    After a few min, place the peaches in the bowl with the tomatoes and use your hands to mix it all through. Pour any remaining sauce from your baking tray over the tomato peach mixture.

    Transfer the fruits to a pretty serving bowl for primo presentation and enjoy this special dish!
