Recipe Lemon Coconut Protein Balls

These zesty little bites of heaven are great for a post-workout treat, breakfast on-the-go, or a mid-day snack. They’re so yummy we reckon they belong in the dessert section, too.

You will need

Makes 12

  • 1 cup cashews
  • 1 cup rolled oats
  • 2/3 cup desiccated coconut
  • 1/2 cup vegan vanilla protein powder
  • Rind of 1 lemon, grated
  • 1 1/2 tablespoons lemon juice
  • 1/3 cup maple syrup
  • 1/2 cup desiccated coconut, extra

30 mins to set

  1. Step 1

    Place cashews, oats and coconut in a food processor and process until fine.

  2. Step 2

    Add protein powder and lemon rind and process until well combined.

  3. Step 3

    Add maple syrup, then slowly add lemon juice teaspoon by teaspoon, blitzing after each addition, until the mixture has a firm but sticky texture.

  4. Step 4

    Spread extra coconut over a large plate. Roll the mixture into 12 individual balls, then roll each in coconut.

  5. Step 5

    Refrigerate for 30 minutes or until firm.
