This dreamy vanilla slice is a bakery classic, made at home — and made totally plant-based! It’s creamy, nostalgic and perfect for sharing (or not).
You will need
Makes 8
- 2 sheets frozen vegan puff pastry
- 145g vanilla custard powder
- 150g sugar (or 200g sugar if your custard powder isn’t sweetened)
- 4 cups (1L) dairy-free milk, such as soy or oat
- 125g vegan spreadable butter
- 2 teaspoons vanilla paste, or vanilla extract
To decorate:
- 300g icing sugar
- 45g dairy-free milk
- 60g melted vegan butter

Step 1
Preheat oven to 200°C (conventional) or 180°C (fan). Line a 23cm square tin with baking paper overhanging.

Line 1 large baking tray with baking paper. Place the two sheets of puff pastry on top and allow to defrost. If you can only fit one pastry on your tray, bake them separately. Place another sheet of baking paper on top of the pastry, then another baking tray on top. Bake for 20-25 minutes or the pastry is golden brown and baked through.

Use a serrated knife to trim the pastry to fit in your baking tin. Place one pastry sheet in your tin.

Add the custard powder, sugar and around 1 cup of milk to a large pot and whisk until smooth. Add the remaining milk, butter and vanilla and place the pot over medium-high heat. Cook for 15-25 mins while whisking constantly. When the custard has thickened, cook for another 3-5 minutes. The custard is ready when it thickly coats the back of a spoon.

If your custard is very lumpy, blend it with a stick blender or strain it through a metal sieve. This will make the custard runny – don’t worry, it’ll thicken later!

Quickly pour the custard into your baking tin and smooth the top. Place the remaining pastry sheet on top.

To make the icing, add all the ingredients to a bowl and mix until smooth. Spread the icing on your vanilla slice. Cover and chill in the fridge for at least 4 hours, but ideally overnight.

Lift the vanilla slice out of the tin. Use a sharp serrated knife and a gentle sawing motion to cut it into slices.
