For the French toast:

  • 1 cup soy milk
  • 2 tablespoons pistachio matcha crema, plus extra for topping
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • 6 slices of bread (we used sourdough)
  • 2 tablespoons vegan butter

To serve (optional):

  • Vanilla coconut yoghurt
  • Fresh berries
  • Pistachios, roughly chopped
  • Matcha, for dusting

  1. Step 1

    Whisk together the soy milk, pistachio matcha crema, vanilla extract, all-purpose flour and a pinch of salt in a small bowl. Pour into a shallow dish.

    Dip each slice of bread into the mixture, ensuring both sides are well coated.

  3. Step 3

    Heat the butter in a pan over medium to high. Once melted, place the coated bread into the pan and cook for a few minutes on each side, or until crispy and golden brown. Repeat for each slice of bread, adding more butter if needed. Cook two slices at a time if pan size allows.

  4. Step 4

    Transfer the French toast to serving plates and top with a drizzle of the pistachio matcha crema and any additional toppings of your choice.
