Pistachios are having their moment — and they truly shine in this luscious, homemade pistachio cream spread! Inspired by the silky pistachio creams found in Italian-style desserts, it’s rich in flavour, vibrant in colour, and perfect swirled, spread, or licked straight from the spoon.

You will need

Makes 1 cup

  • 1 cup shelled pistachios
  • 1/2 cup sunflower oil (or neutral flavoured oil)
  • 1/4 cup plant-based milk
  • 1/3 cup caster sugar
  • Pinch of salt

  1. Step 1

    Simmer the pistachios in water for 20 minutes. Drain well and rub away the skins with your hands. Boiling the pistachios should make this process easier. If some skin remains, that’s okay. Peeling off the skins just makes for a smoother texture.

  2. Step 2

    In a food processor or high-powered blender, add the pistachios, oil, milk, caster sugar and salt. Process until smooth, scraping down the sides as you go.

  3. Step 3

    Pour your cream into a jar or container and set aside to cool – or use warm if you prefer!

Hot tip!

If you prefer your pistachio cream less sweet, reduce the caster sugar a little. If you’re after a more savoury cream, omit the sugar before blending and add extra salt to taste.

Store the spread in the refrigerator to keep fresh.
