This one-pan Fagioli Al Sugo is simple, rustic, and packed with Italian flavour. Combining creamy beans, sweet tomato sauce, and peppery greens, it’s a rich, saucy dish worth making on repeat.
You will need
Serves 2
2 tablespoons olive oil, plus extra to serve
1 small onion, diced
300g cannellini beans
1 cup canned diced tomatoes
2 tablespoons tomato paste
1/2 teaspoon dried oregano
1 teaspoon salt
Cracked black pepper
1 cup water, divided
1 1/2 cups bitter green leaves, like rocket or dandelion
Warm the oil in a pan over a medium heat. Add the onions and sauté for 3 minutes or until soft.
Step 2
Stir through the cannellini beans, tomatoes, tomato paste, oregano, salt, pepper and 1/2 cup of water. Add the greens, cover and simmer on low for 10 minutes, stirring occasionally.
Step 3
Stir through another 1/2 cup of water. Simmer for a further 3 minutes.
Step 4
Remove from the heat. Drizzle with olive oil and serve.
