A rich and fluffy mousse that doesn’t warrant the label of ‘cheat meal’! Enjoy the creamy magic of avocados a little differently – or not. (We’re pretty sure this would still make for a great toast topping 😋)

You will need

Makes 4

  • 1 large ripe avocado
  • 1 cup coconut cream (liquified at room temperature or in the microwave)
  • 1/3 cup maple syrup or agave
  • 1/4 cup cocoa
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla bean paste
  • Nuts or fruit for garnish (optional)

  1. Step 1

    Combine all ingredients in a blender and blend until smooth.

  2. Step 2

    Scoop mixture into 2-4 cups, glasses or small bowls. Gently tap and wiggle the dish to even out the mousse.

  3. Step 3

    Cover and refrigerate for at least one hour, though overnight is best.

  4. Step 4

    Sprinkle with your choice of garnish, and serve. (Nuts, fresh or freeze-dried fruit, and shaved chocolate all work well!)
