A rich and fluffy mousse that you can feel extra-good about! Enjoy the creamy magic of avocados a little differently – or not. (We’re pretty sure this would still make for a great toast topping 😋)
You will need

1 large ripe avocado
1 cup coconut cream (liquified at room temperature or in the microwave)
1/3 cup maple syrup or agave
1/4 cup cocoa
1/2 teaspoon salt
1 teaspoon vanilla bean paste
Nuts or fruit for garnish (optional)

1 hour to chill
Step 1
Combine all ingredients in a blender and blend until smooth.
Step 2
Scoop mixture into 2-4 cups, glasses or small bowls. Gently tap and wiggle the dish to even out the mousse.
Step 3
Cover and refrigerate for at least one hour, though overnight is best.
Step 4
Sprinkle with your choice of garnish, and serve. (Nuts, fresh or freeze-dried fruit, and shaved chocolate all work well!)
