Recipe Herby Olive Oil Pasta

If Olive Oil had best friends, they would be called Salt, Garlic, and Herbs. Get yourself a top-notch olive oil that you really love the flavour of -- and then let it shine in this beautifully simple dish!

  • 1 packet spaghetti
  • 50 ml olive oil
  • 5 garlic cloves
  • 1 bunch parsley
  • 1 lemon, zest only
  • Salt and pepper

  1. Step 1

    Cook pasta in generously salted water, until al-dente, or even just before that point, as it will finish cooking in a frypan.

  2. Step 2

    Slice the garlic into rounds and place in the oil in a pan on medium heat. Bring it to a simmer.

  3. Step 3

    Chop all the parsley very finely. As soon as the garlic gets even a suggestion of colour, add the parsley and cook for 1 minute.

  4. Step 4

    Add the pasta from the water to the parsley-oil mixture, along with ~1/2 cup of the pasta water (the starch in the water will help thicken the oily sauce in the pan). Zest the lemon over your pasta.

  5. Step 5

    Turn the heat up for the last moment, season with salt & pepper, stirring to combine everything really well; then use tongs to place the pasta in a bowl.

  6. Step 6

    Finish with a drizzle of olive oil and a little extra lemon zest to garnish!
