If Olive Oil had best friends, they would be called Salt, Garlic, and Herbs. Get yourself a top-notch olive oil that you really love the flavour of — and then let it shine in this beautifully simple dish!
You will need
Serves 1
- 1 packet spaghetti (gluten-free if needed)
- 50 ml olive oil
- 5 garlic cloves
- 1 bunch parsley
- 1 lemon, zest only
- Salt and pepper

Step 1
Cook pasta in generously salted water, until al-dente, or even just before that point, as it will finish cooking in a frypan.

Slice the garlic into rounds and place in the oil in a pan on medium heat. Bring it to a simmer.

Chop all the parsley very finely. As soon as the garlic gets even a suggestion of colour, add the parsley and cook for 1 minute.

Add the pasta from the water to the parsley-oil mixture, along with ~1/2 cup of the pasta water (the starch in the water will help thicken the oily sauce in the pan). Zest the lemon over your pasta.

Turn the heat up for the last moment, season with salt & pepper, stirring to combine everything really well; then use tongs to place the pasta in a bowl.

Finish with a drizzle of olive oil and a little extra lemon zest to garnish!
