
Creamy Mushroom Pasta Bake Recipe
Packed with flavour and topped with garlicky breadcrumbs, this pasta bake is a creamy, crispy, seriously satisfying dish to enjoy any night of the week.
You will need
Serves 5
- 400g spiral (fusilli) pasta
- 3 tablespoons olive oil (plus extra for drizzling)
- 300g Portobello mushrooms, sliced
- 2 cloves garlic, minced
- 1 sprig rosemary
- 1 sprig thyme
- Zest of a lemon
- 1/2 teaspoon salt
- Pepper, to taste
For the sauce:
- 300g silken tofu
- 1/4 cup nutritional yeast
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1/2 cup almond milk (or any unsweetened plant milk)
- 1/2 cup water
- 20g raw cashews (approx 20 kernels)
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon salt
Toasted bread crumbs:
- 1/2 cup (80g) bread crumbs
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt

Directions

Step 1
Preheat the oven to 200°C.

Step 2
For the pasta, place a large pot of water with 1/2 a teaspoon of salt on the stove and bring it to a boil.

When the water has come to a boil, add the pasta and cook it for 3/4 of the time it’s suggested on the packaging. In other words, cook until it’s ‘al dente’. Strain the pasta and save 1/2 cup of the cooking water. (You’ll need this for step 6)

While the pasta cooks, add the olive oil, mushrooms, garlic, thyme, and rosemary to a frying pan on medium heat. Sauté for about 10 minutes until nice and soft. When cooked, add lemon zest, salt, and cracked pepper to taste and stir in. Set aside.

In a high-speed blender, add the sauce ingredients and blend until smooth.

Mix the pasta with the creamy sauce, the reserved pasta water, and the mushrooms. Taste and add salt and pepper if required. When it’s well mixed, place all of it into a baking dish and drizzle with some olive oil.

Bake for 10 minutes and in the meantime prepare the bread crumb topping.

In a frying pan, add olive oil, minced garlic, and breadcrumbs. Toast until the garlic releases aroma, then add the nutritional yeast and salt. Take the pasta bake out of the oven, distribute the bread crumbs evenly on top and return to bake for another 10 minutes.

Plate and serve straight away.
