Crispy on the outside, tender on the inside, and powered entirely by plants — these vegan prawns bring big flavour without the fishy business. Smoked paprika adds warmth, coconut brings texture, and a punchy sriracha yoghurt seals the deal.

You will need

For the prawns:

  • 300g vegan prawns, defrosted
  • 3 tablespoons corn flour
  • Salt and pepper, to taste

For the batter:

  • 3/4 cup dairy-free milk
  • 1/2 cup corn flour
  • 1 tablespoon lemon juice
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon baking powder

For the crumb coating:

  • 1 cup panko crumbs
  • 1/2 cup desiccated coconut
  • 2-3 cups neutral oil, for frying

For the dipping sauce:

  • 1/4 cup natural dairy-free yoghurt
  • 1-2 tablespoons sriracha sauce, to taste
  • 1 tablespoon lemon juice, to taste
  • 1 teaspoon finely chopped green onion
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

  1. Step 1

    Add the vegan prawns, corn flour, salt, and pepper to a small bowl and toss until combined and the prawns are coated evenly.

  2. Step 2

    Add all the batter ingredients to a small bowl and mix until smooth. It should be the consistency of pancake batter. For a thinner batter, add more milk or for a thicker batter, add more corn flour.

    For the coating, add the crumbs and coconut to another small bowl and mix until just combined. Set aside.

    Add the oil to a medium-sized pot and place over medium-high heat (the setting will depend on your stove but if you place the end of a wooden spoon in the oil, it should bubble when ready).

    Dip each vegan prawn in the batter allowing any excess to drip off. Toss in the crumb mixture and coat well. For extra crunchy prawns, dip each prawn in the batter and crumbs twice.

  6. Step 6

    Deep fry the prawns in batches, turning them halfway so they’re evenly golden brown. Place the prawns on a paper towel lined plate to cool slightly.

  7. Step 7

    For the sauce, mix all ingredients in a small bowl. Taste and adjust as needed.

    Serve the prawns and sauce immediately and enjoy!
