To make the cake bars: Preheat your oven to 190°C and grease two cake bar tins.
In a large mixing bowl sieve your flour, baking powder, baking soda and salt. Add sugar, coconut and mix together well using a whisk.
In a large jug or bowl, combine the coconut milk, vegetable oil, vanilla essence, lime juice, and lime zest.
Make a well in your dry mixture and gently pour in one third of your wet mixture. Fold in the liquid using a whisk, then add another third, folding again before repeating the process with the last of the wet mixture until just combined. Don’t over mix. (Don’t worry if it’s a little lumpy).
Pour the batter into the cake bar tins, filling each one 3/4 full.
Put the trays into the oven on the top rack and bake for 15-17 minutes or until a skewer comes out clean when poked into the middle of one of the cake bars.
Leave the cake bars in their tins for 5-10 minutes before moving to a cooling rack, so the bottoms don’t become soggy.
To make the glaze: In a small bowl mix together the icing sugar and lime juice until well combined. Once the cake bars are at room temperature, pour a tablespoon of icing over the top of each cake, and top with the toasted coconut flakes and lime zest. They are now ready to eat!
Store in an airtight container in the cupboard, as they will dry out if kept refrigerated.
