These overnight oats are truly oat of this world! Easy, wholesome, and perfect for meal prep, they make for a deliciously satisfying brekky you can enjoy even on busy mornings.

You will need

Serves 4

For the oats:

  • 1 cup rolled oats
  • 2 cups soy milk
  • 1 cup coconut milk kefir
  • 1/4 cup maple syrup
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 4 tablespoon chia seeds or linseeds (or a mix)
  • 2 tablespoon sunflower seeds
  • 2 tablespoon pumpkin seeds
  • 2 apples, thinly sliced or grated
  • 1 cup frozen berries

To serve:

  • Fresh berries
  • Orange juice
  • Extra soy milk or coconut yogurt (optional)

  1. Step 1

    Add the rolled oats, soy milk, coconut milk kefir, maple syrup, salt, vanilla, and cinnamon to a large bowl. Stir well to combine.

  2. Step 2

    Stir in the chia seeds (or linseeds), sunflower seeds, and pumpkin seeds, mixing until evenly distributed. Fold through the apple and frozen berries.

  3. Step 3

    Cover the bowl and refrigerate overnight, or for at least 4 hours, to allow the oats to soften.

  4. Step 4

    Remove from the fridge and stir well. If the mixture is too thick, loosen with a splash of soy milk or a spoonful of coconut yogurt, if desired.

  5. Step 5

    Top with fresh berries, and serve with your favourite brekky beverage!
