Apple & Mixed Berry Overnight Oats Recipe
Show moreThese overnight oats are truly oat of this world! Easy, wholesome, and perfect for meal prep, they make for a deliciously satisfying brekky you can enjoy even on busy mornings.
You will need
Serves 4
For the oats:
- 1 cup rolled oats
- 2 cups soy milk
- 1 cup coconut milk kefir
- 1/4 cup maple syrup
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 4 tablespoon chia seeds or linseeds (or a mix)
- 2 tablespoon sunflower seeds
- 2 tablespoon pumpkin seeds
- 2 apples, thinly sliced or grated
- 1 cup frozen berries
To serve:
- Fresh berries
- Orange juice
- Extra soy milk or coconut yogurt (optional)

Directions

Step 1
Add the rolled oats, soy milk, coconut milk kefir, maple syrup, salt, vanilla, and cinnamon to a large bowl. Stir well to combine.

Stir in the chia seeds (or linseeds), sunflower seeds, and pumpkin seeds, mixing until evenly distributed. Fold through the apple and frozen berries.

Cover the bowl and refrigerate overnight, or for at least 4 hours, to allow the oats to soften.

Remove from the fridge and stir well. If the mixture is too thick, loosen with a splash of soy milk or a spoonful of coconut yogurt, if desired.

Top with fresh berries, and serve with your favourite brekky beverage!
