Mushroom Steak with Onion Gravy Recipe
Craving a dinner that’s savoury, juicy, and super comforting? Look no further! Once you tuck into this hearty mushroom steak slathered with onion gravy, we guarantee you won’t have mushroom left for dessert.
You will need
Serves 4-6
For the onion gravy:
- 50ml olive oil
- 2 brown onions, sliced
- Pinch of salt
- 2 sprigs thyme
- 1 bay leaf
- 100ml red wine
- 30ml vegan Worcestershire sauce
- 500ml mushroom stock
- 1 teaspoon Vegemite
- 1 tablespoon plum jam
- 2 teaspoons of flour mixed with 2 tablespoons water (slurry)
For the mushroom steaks:
- 1 large lion’s mane mushroom (or king oyster / field mushrooms)
- 50ml olive oil
- Salt and pepper
To serve:
- Mashed potatoes
- Peas

Step 1
Heat olive oil in a pan over medium-low heat. Add the sliced onions and a pinch of salt, and cook slowly for 15 to 20 minutes, stirring occasionally, until golden and caramelised.

Add the thyme, bay leaf, red wine, and Worcestershire sauce. Simmer until the liquid has reduced significantly, leaving about one-quarter of the original volume. Pour in the mushroom stock and simmer until reduced by half.

Stir in the Vegemite and plum jam, then add the flour slurry, stirring continuously until the gravy thickens to a rich consistency. Remove the thyme stems and bay leaf.

Slice the lion’s mane mushroom into thick “steaks” and season with salt and pepper.

Heat the remaining olive oil in a frying pan over medium heat. Add the mushrooms and cook for about 5 minutes on each side, or until golden and crisp around the edges.

Plate up the mushroom steaks with the onion gravy and serve with mashed potatoes and peas on the side.
