If you’re looking for the perfect way to start your day, you’ve found it. Light, refreshing, and packed full of nutrients, have this with your morning cuppa or take it with you for a quick and healthy snack on the go.

You will need

Serves 2

For chia pudding

  • 4 tablespoons chia seeds
  • 1 1/2 cups coconut cream
  • 2 teaspoons brown sugar
  • 2 tablespoons durian (canned is fine, if you can’t find fresh!)

For the topping

  • 1/2 abiu fruit
  • 1/2 passionfruit
  • 1/2 star fruit, sliced
  • 1 durian wedge
  • 1 lime, zest and juice

  1. Step 1

    Place the chia, coconut cream, brown sugar and durian in a bowl and mix to combine. Then divide equally between two short, wide jars. Give them a few minutes to set.

  2. Step 2

    Using a melon baller or small spoon, scoop out spoonfuls of abiu and passionfruit and place them on top of the chia pudding with slices of star fruit and another wedge of durian.

  3. Step 3

    Add lime zest and a squeeze of lime juice to each jar, then seal and pop in the fridge for later, or enjoy immediately!
