This is a perfect snack to serve when guests come over, on its own or alongside a platter of finger foods — the classic bowl of olives, but with a twist!

You will need

  • 50 millilitres olive oil
  • 1 garlic clove, thinly sliced
  • 200 grams pitted Kalamata olives
  • 100 grams smashed macadamias
  • 3 peels of lemon rind
  • 1 teaspoon chilli flakes

  1. Step 1

    In a pan on low to medium heat add your oil and garlic so the garlic flavour mixes through the oil.

  2. Step 2

    After a moment, add the rest of the ingredients and cook gently for about 5 minutes, until the macadamias softly start to colour. You can turn up the heat for 30 seconds at the very end to get a little extra heat through the mixture before removing from stove.

  3. Step 3

    Pour into a bowl and set aside for 20–30 minutes — the oil will sink to the bottom. Then they’re ripe for snacking!
