You can have this meal on the table in five minutes, Simon says! (But give yourself 10, for safety’s sake.) Pop the noodles on the stove, prepare the marinade while they’re cooking, and assemble as soon as those noodles are cooked, voilà! Easy peasy.

You will need

Serves 1

  • 2 packets ramen noodles (alkaline noodles)
  • 200 g silken tofu, steamed and cubed
  • 20 g roasted and crushed peanuts (optional)
  • 1 spring onion, diced (greens only)

For the marinade:

  • 1 garlic clove, minced
  • 1/4 teaspoon stock powder
  • 1 teaspoon caster sugar
  • 1/4 teaspoon Szechuan pepper powder
  • 1/5 teaspoon Chinese 5 spice
  • 1 tablespoon soy sauce
  • 1 tablespoon tahini
  • 1 tablespoon crispy chilli oil
  • 2 tablespoon noodle cooking water

  1. Step 1

    Cook the noodles based on package instructions.

  2. Step 2

    Mix together in a bowl the garlic, stock, sugar, Szechuan pepper, Chinese 5 spice, soy sauce, and tahini until a thick paste is formed. Add in 2 tablespoons of the boiling water from the noodles and stir well.

  3. Step 3

    In a serving bowl, pour in the marinade first, topping with crispy chilli oil. Strain the noodles, and add them into the serving bowl, tossing until the noodles have absorbed the marinade.

  4. Step 4

    Top with the tofu to one side, and garnish with spring onions and crushed nuts.

  5. Step 5

    Spoon some more crispy chilli oil over the tofu to taste (optional), and serve.
