Wash the strawberries and pick off the green tops.
Place strawberries in a bowl with sugar and lemon juice.
Squash the strawberries (using your hands or even a potato masher), mixing them well with the sugar until they break down and release their liquids.
Place a strainer into a larger, clean bowl. Drape a cheesecloth over them both, then pour the strawberry liquid mixture into the cheesecloth. Then gather up all the clean edges of the cheesecloth, and tie them together with a string, and lift the sack of strawberry puree out of the strainer and bowl. You can remove the strainer from the setup now, and hang the strawberry mixture somewhere with the bowl underneath it, so that the pure strawberry essence can slowly drip down into the bowl.
Throw the lemon verbena into the bowl, and leave the mixture to hang for at least 3–4 hours until most of the liquid drips down to the bowl.
Remove the lemon verbena. Spoon the ‘perfume’ into dessert bowls or serving glasses, add a dollop of coconut yogurt on top, and serve!
