There’s nothing quite like the smell of homemade pizza fresh from the oven! This Italian-style rustic pizza boasts a golden, chewy crust, smothered in rich tomato sauce and all your favourite toppings. It’s a simple, satisfying recipe made for sharing with loved ones.

For the pizza dough:

  • 700ml warm water
  • 1 1/2 tablespoons dry yeast
  • Pinch of sugar
  • 1kg plain flour
  • 1 tablespoon salt
  • Oil, for greasing

For the pizza sauce:

  • 2 tablespoons olive oil, plus extra to drizzle
  • 1/2 garlic clove, crushed
  • 700g tomato passata or crushed tomatoes
  • 1 heaped tablespoon of tomato paste
  • 1/2 teaspoon salt
  • A few handfuls of fresh basil leaves or dried oregano
  • Dried oregano, to sprinkle

  1. Step 1

    For the pizza dough: Combine 1/2 cup of the warm water, yeast and sugar in a small bowl and whisk to combine. Set aside for 5 minutes to activate or until it becomes frothy and bubbly.

    Pour the flour and salt into an extra-large bowl and make a well in the centre. Add the liquid yeast and the remaining water. Stir with a fork until combined, then use your hands to bring the dough together in the bowl. Add a dash more water if too dry or extra flour if too wet.

    Turn the dough onto a floured surface and knead well for 10 minutes until smooth and elastic.

    Place dough into a large greased bowl and cover with a towel. Leave to rise in a draught-free place to double in size (1-2 hours). Meanwhile, make the pizza sauce.

    For the sauce: In a medium saucepan, heat the oil over a medium heat and fry the garlic for 1 minute, being careful not to brown. Add the passata, tomato paste, and salt, then cover and simmer for 10 minutes, stirring occasionally.

    Preheat a fan-forced oven to 210C.

    Turn the dough onto a floured surface and cut into thirds. Onto well-greased oven trays, gently stretch out the pizza to fit each tray. This will create a rustic-shaped pizza. Top each pizza with the pre-made sauce. Swirl over a little olive oil and sprinkling of oregano. You may also add extra toppings.

    Bake in the oven for 15-20 minutes or until the crust is golden brown. Enjoy!

Variation

Instead of a tomato base, try a potato pizza! Layer with slices of blanched potatoes, sprinkle with plant-based parmesan, chopped rosemary and drizzle with olive oil.
