No doubt, a granny smith apple is delicious straight off the tree, but uhm — have you ever tried grating it into a batter and deep frying it and then covering it in an apple flavoured icing? Get to it, buddy!
You will need
Serves 4
1 granny smith apple
2 tablespoons raw sugar
1 tablespoon caster sugar
1/2 teaspoon salt
1 1/2 cups all-purpose flour (or gluten-free flour if needed)
1/4 cup warm water
2/3 cup warm oat milk (or plant milk of choice)
7g dry active yeast
Vegetable oil, for frying
For the icing
1 cup icing sugar
1/4 cup apple juice
Serve
1 granny smith apple, cut into matchsticks for serving

Directions

Step 1
In a large bowl combine the flour, warm oat milk, warm water, salt, sugars and yeast.
Step 2
Grate the fresh granny smith apple, add to the batter mixture and stir through. Leave for 20 minutes.
Step 3
Heat oil to around 170–180°C. To make fritters, use your hands or a spoon to drop large, beautiful globs of apple batter into the oil and leave to cook for 7–8 minutes or until golden and crispy.
Step 4
Add icing sugar to a bowl and whisk in the apple juice one tablespoon at a time until resembling a glaze consistency.
Step 5
Take out the apple fritters and drain on a paper towel. Drizzle the glaze on top and finish with fresh apple matchsticks.
