Creamy, crunchy, sweet and tart, this easy Biscoff soft serve is everything you want in a dessert – with none of the fuss! Serving up velvety ice cream with flecks of Biscoff crunch, bursts of juicy berries, and a touch of peanut crumble, it’s effortlessly indulgent.
You will need

- 1 tub coconut-based vanilla ice cream
- 1 punnet raspberries, reserve a few for garnish
- 1 packet Biscoff biscuits
- 100g roasted peanuts blended to a crumble
- A few strawberries to garnish

Step 1
Place the ice cream in a mixer together with the Biscoff biscuits and the raspberries. Mix quickly and vigorously until everything is combined.

Step 2
Scoop the ice cream into small bowls – it will be soft, but that’s the best part. Simply top with a few berries and anything else you like to add, and dig in.
