Sometimes you just need to take note of really well-made product. Fable Food Co. have turned shiitake mushrooms into a meaty range of plant-based products that deserve to be front and centre in a burger.
Cut the bread down the middle but not all the way to the end, butter and toast on the grill.
Step 2
Add the Fable mushrooms to a hot frypan and squirt in 30ml mushroom stock to help moisten them and keep them from sticking to the pan; lay a lid on top and cook for 30 seconds.
Step 3
Take the bread off the grill. Spoon the mushroom mixture onto the bun, along with any leftover stock.
Step 4
Add a squeeze of the vegan smoked mayo and top with the pickles and fresh dill.
Variation
Though this recipe heroes Fable’s meaty mushroom-based product, if you can’t get your hands on this, you can swap out the Fable meat for a plant-based meat alternative like meat-free ‘chicken‘ or ‘beef‘ strips. The end result will be similarly satisfying and delicious!
